Smoked Tomato Relish Muffins

Ingredients

2 Cups Self Raising Flour

1/2 Cup Pat's Smoked Tomato Relish + Extra to serve

2 Cups Shredded Ham

1 Cup Baby Spinach Leaves

1/4 Cup Chives chopped

1 1/2 Cups Grated Cheddar Cheese

1/2 Cup Extra Virgin Olive Oil

1 Cup Milk

2 Eggs

Salt and Pepper to taste

Optional Extra - Add baked pumpkin and feta cheese into the mixture. 


Method

1. Preheat oven to 180C

2. Add all ingredients into a large mixing bowl until they are combined
3. Divide the mixture between 12 - 1/2 Cup capacity lightly greased muffin tins and cook for 25 minutes or until cooked when tested with a skewer.
4. Turn out onto a wire rack to cool
5. Serve with Leslie's Onion Jam or Pat's Smoked Tomato Relish
