Corn Fritters

Ingredients

1 1/2 Cups Self Raising Flour

2 Eggs

1 Cup Milk

1/2 Cup Grated Tasty Cheese

1/2 Cup Finely Grated Parmesan Cheese

2 Tablespoons Chopped Chives

3 Cups Corn Kernels - Fresh or Frozen

1/4 Cup Frozen Peas

Salt and Pepper to taste

Olive Oil

Sour Cream to serve

Pat's Smoked Tomato Relish to serve


Method

1. Add flour, eggs and milk to a large mixing bowl and mix until smooth

2. Add cheeses, chives, corn, peas, salt and pepper. Mix to combine all ingredients

3. Heat 2 teaspoons of olive oil in a large non-stick frying pan over a medium heat

4. Add roughly 1/2 cup of the mixture to the pan for each fritter. Cook 2-3 at a time, cook for 2-3 minutes each side until puffy and golden

5. Continue to cook the remaining fritters, adding oil as necessary

6. Stack and serve fritters warm topped with sour cream and Pat's Smoked Tomato Relish. Also add a side salad with avocado for a great brunch meal.
