Zucchini Slice with Smoked Tomato Relish

Ingredients

5 Eggs

1 Cup Self Raising Flour

375g Zucchini grated

1 Large Onion finely chopped

200g Rindless Bacon chopped

1 Cup Tasty Cheese grated

1/4 Cup Vegetable Oil

1 Cup Frozen Peas and Corn

Pat's Smoked Tomato Relish to Serve


Method

1. Preheat oven to 170C

2. Add eggs to a large bowl and mix until combined.

3. Add flour and beat until smooth

4. Add zucchini, onion, bacon, cheese, oil, and frozen peas and corn. Stir to combine all ingredients (vegetarian version leave out bacon)

5. Grease and line a 30cm x 20cm lamington pan

6. Pour mixture into the prepared pan and bake for 30 minutes or until cooked through.

7. Allow to cool slightly. Slice into pieces

8. Serve hot or cold topped with Pat's Smoked Tomato Relish

Add a side salad for a delicious lunch.
