Potato Fritters

Ingredients

2 Cups Potato grated

2 Cups Self-Raising Flour

3 Eggs

1 1/2 Cups Milk

1 Cup Parmesan Cheese grated

1 Onion finely chopped

Salt and Pepper to taste

Olive Oil

Sour Cream to serve

Leslie's Onion Jam to serve

Optional - Add 1 cup of frozen peas


Method

1. Add flour, eggs and milk to a large mixing bowl and stir until combined

2. Grate the potato and squeeze out any liquid

3. Add the potato to the flour mixture with onion, cheese, salt and pepper

4. Mix all ingredients to combine

5. Add 2 teaspoons of olive oil to a non stick pan over a medium heat.

6. Scoop 1/4 cup of mixture into the pan to create each fritter.

7. Cook in batches for 3-4 minutes each side or until golden brown and cooked through. Add olive oil to the pan as required

Serve topped with sour cream and Leslie's Onion Jam. Add a salad with avocado for a lovely brunch meal
